Apple Cake Recipe

Monday Nights bee had a people requesting the Apple Cake recipe from Trudi.
Here it is in all its glory!

  • 4 cups apples – chopped and peeled (approximately 4 apples)

  • ¾ cups oil

  • 1 cup nuts

  • 2 cups sugar

  • 2 eggs

  • 2 tsp. cinnamon

  • 2 tsp. baking soda

  • 2 cups flour


Mix all ingredients in a bowl. Pour into greased Bundt pan or 2 quart casserole. Bake at 375 for one hour. Shift confectioner's sugar on top or serve with whipped cream, frosting, or ice cream.

Peanut Butter Pie

Here's the recipe from Laura Savage for the Peanut Butter Pie we had for July's first Monday bee.

Ingredients:
Graham Cracker Crust
8oz package cream cheese or neufchatel.
1/2 cup peanut butter (smooth or crunchy)
1 cup powdered sugar
1/2 cup milk
1 container cool whip (thawed)

9 in pie pan or 8" x 12" pan

Directions:
Be sure that the cream cheese is at room temperature.
Beat the cream cheese until fluffy.
Beat in the peanut butter and the powdered sugar.
Add in the milk and beat until smooth.
Fold in the cool whip.
Pour into container and put into freezer for at least 4 hours.
